What Is Quiche?
Quiche is a French dish typically that consists of a pastry shell, filled with a savory egg custard and any number of ingredients like vegetables, meat, and cheese. After baking, the custard’s texture should be airy and slightly creamy. The egg flavor should not be too forward so it can act as the perfect bowl for the other delicious ingredients you add.

What are the Best Mix-ins for a Quiche?
There are many classic quiche recipes such as Quiche Lorraine, packed with savory Gruyère and bacon but I also enjoy filling our quiches with veggies like zucchini and tomatoes or a wild mushroom blend.
Most quiche add-ins should be pre-cooked but they can still be warm when mixing into the egg filling. Spinach, kale, bell pepper, and tomatoes can be fresh, but you can definitely sauté them first if desired. Some of my favorite quiche add-ins:
- goat cheese
- cooked cubed ham
- bacon
- caramelized onions
- sautéed mushrooms
- sautéed chopped asparagus
- chopped fresh parsley
Stick to 1/2 – 1 cup cheese and up to 2 cups vegetables and/or meat add-ins. (Since fresh spinach packs down, you can go heavy on it.)
Recipe – Crustless Quiche
This quiche is the perfect addition to brunch, just slice and serves with a fresh green salad.
Not only is this quiche low carb, most importantly it’s super easy. No crust, no problem!
YIELDS:6 SERVINGS PREP TIME: 20 MINS. TOTAL TIME: 40 MINS.
INGREDIENTS
- 1 tbsp. butter
- 8 oz. mushrooms, thinly sliced
- shallot, minced.
- 2 cups loosely packed spinach
- Kosher salt
- Freshly ground black pepper
- 8 large eggs
- 1/4 cup milk
- 1/4 cup packed tomatoes, finely chopped
- 1/4 cup freshly grated Parmesan
DIRECTIONS
- Preheat oven to 375°. In a medium skillet over medium heat, melt butter. Add mushrooms and let cook, undisturbed, for 2 minutes. Stir and continue to cook until mushrooms are tender and golden, 5 to 6 minutes. Add shallot and cook until fragrant, 1 minute. Add spinach and cook until wilted, 1 minute more. Season with salt and pepper and remove from heat.
- In a large bowl, whisk together eggs, milk, tomatoes, and Parmesan. Fold in the mushroom mixture and season again with salt and pepper. Pour into an 8″ to 9″ pie dish and bake until eggs are just set, 18 to 20 minutes, and let cool 3 minutes before slicing and serving.
