BoterKoek ( butter cake )

Being from a Dutch background, I always had boterkoek growing up when we went to my Oma’s on Sunday, after church. It was one of my favorites. Since my Oma is too old and her baking days are over, I asked my Aunt for the recipe, And I thought I would share it with all of you.

The original recipe calls for butter, because it is called buttercake after all. But I like to use margine because it leaves the cake softer and has more moisture to it. Use whatever you desire because it is still tastes awesome.

You first need to mix the butter and sugar together. The butter should be at room temperature. Mix till the ingredients are combined. ( about 3-5 min. )

Next, Add in the egg, and the almond extract. Mix until it looks like….

THIS!! ( about 3 min.)

Mix in the flour and baking powder. If you are doubling ( or tripling ) the recipe then add the flour in parts at a time. Trust me I’ve learned from experience, the flour will end up EVERYWHERE!

Bake at 350* for 15 mins.

And that’s it! They are SO yummy, I tend to eat them right out of the oven!

Ingredients

2/3 cup butter / margarine

1 cup sugar

1 egg

1 1/2 tsp almond extract

1 1/2 cup flour

1/2 tsp baking powder
